Moon cake recipes

Dough
3 teaspoons baking powder
1/2 teaspoon salt
3 eggs
125 g sugar
100 g butter
1 egg yolk (for the golden colour)
Milk
400 g all-purpose flour

Filling
Lotus seed paste or
Red bean paste
or any other...

1. Prepare filling.
2. Prepare dough
Melt butter and let cool. Mix flour, baking powder, and salt together into a bowl. In another bowl beat eggs and add sugar (about 10 minutes). Add melted butter and beat again. Then add the flour mixture. If the mixture is too compact add milk. Knead for 1 minute or until smooth and satiny.
3. Create moon cakes
Divide your dough into even pieces of 40 g each. Roll the dough into a ball and flatten out with your hand. Weigh the filling (40 g each). Place the filling in the middle of the flat dough and slowly wrap around it. Seal the edges and roll dough lightly between your palms until the filling is hidden. Dust mould lightly with flour. Press doughball into the mooncake mould (if at hand). Knock the mould against the table to dislodge the mooncake.Bake in a preheated oven at 180 ÂșC for 10 minutes. Remove and leave to cool for 5 minutes. Brush on the beaten egg yolk. Return to bake for another 10 minutes or till golden.
